Olympic Countdown – Shchi – Traditional Russian Soup

Traditional Russian Cabbage and Potato Soup (Shchi) with Black Bread

This is an easy (vegan) tasty traditional twist on Russian Cabbage and Potato soup.

2 tablespoons of olive oil

1 large yellow onion -chopped

1 large yukon potato chopped

5 stalks of celery – chopped

3 carrots – peeled and chopped

1 small head of savoy cabbage – chopped

1 can of fire roasted diced tomatoes

1 teaspoon of dried dill

salt and fresh ground black pepper to taste.

In a large pot heat the olive oil and add the onion.  Cook until softened, about 10 minutes.

Stir the onions and then add the potatoes.  Stir in 4 cups of water and cook on a medium flame for about 10 minutes. Add the celery and carrot and cook another 10 minutes.  Add the cabbage, stir, and add more water to cover (about 3 cups) as needed.  Bring the soup back to a simmer and add the dill, salt, pepper and diced tomatoes.  Cook for another 15 – 20 minutes until the flavors combine and the soup is heated through.  Adjust seasonings if needed.  Serve hot!
