So Long Soy

soy_beansIt’s sad.  I know many of you don’t want to let it go.  It’s like a relationship you thought was “the one” but aside from the mounting evidence that soy, specifically processed soy, that is found in soy milk, soy cheese and other soy amalgamations, is really NOT that good for you, there is a much bigger reason to cut soy loose.   It’s land.  The land is takes to grow soy.  The land not being used to grow fruit or vegetables or non-GMO soy.  We are eating up our precious land with a single crop (well, actually three, soy, corn and wheat).   Just like your financial portfolio, we must all learn to diversify our diet.  But industrial farms make that hard as do the big food companies that mass produce foods with low nutritional value.  They make it cheap and plentiful so it’s hard to shop in the grocery store without being bombarded by the three stooges (yes, corn, wheat and soy).  Large scale growers have got it down.  It’s the economy of scale that makes the most sense in a profit based farming system.  The problem is, profit is not nutritious, environmentally responsible or sustainable.  So long soy.
