Spiced Roasted Cauliflower

 

There’s a great restaurant in town that serves the most delicious cauliflower I’ve ever tasted.  I think their secret is tempura frying the cauliflower and topping with a sweet and sour sauce, which I am sure has way more sugar than I would care to know I am ingesting.  I wanted to recreate the crunch and flavor without the sugar and frying so I came up with this super easy way to roast the normally bland, white veggie to give it a bit more flavor and crunch!

Spiced Roasted Cauliflower

1 head Cauliflower, washed, dried and broken into small florets

2 Tablespoons Mayonaise

1/4 teaspoon kosher salt

1/4 teaspoon ground mustard seed

1/4 teaspoon curry powder

pinch of fresh ground pepper

2/3 cup panko bread crumbs

Preheat oven to 375 degrees. In a large bowl combine all ingredients except the cauliflower.  Add cauliflower florets and gently stir to evenly coat all the pieces.  Turn out onto a rimmed baking sheet and roast for 25 minutes or until golden brown.
