Black Bean Tacos

All the Fixin’s for an easy taco bar!

Here’s a very easy and quick veggie dinner!  For my friends across the pond, I did the metric conversions for you!

Black Bean Tacos

1 can black beans (about 475mL)

10 mL Garlic Powder 1teaspoon)

15mL Chili Powder (1 Tablespoon)

8 Taco Shells

1/2 head of Chopped Lettuce

1 Chopped Tomato240mL

Shredded Cheese of Choice (Queso, Cheddar, etc.) (1 cup)60mL

Sour Cream (1/4 cup)

Open and rinse the black beans in a colander. Pour into a pot and add about 60mL water (1/4 cup).Bring to a simmer over low heat and cook for about 20 minutes.  Add a pinch or two of garlic powder and about 15mL of chili powder (1 tablespoon).  Mash well (I use a potato masher.)
Arrange all ingredients in separate bowls and plates and let everyone make their own taco.Serves 4 with 2 tacos each.  Feel free to halve or double the recipe.

Cheers!

Jill
