Simple Summer Slaw

With the heat rising, I am longing for cool, fresh dishes that are light and quick to prepare. This July 4th weekend, I’ve whipped up a simple summer slaw that takes just a few minutes to throw together. It’s light and tasty and pretty healthy too! The perfect side dish for your summer BBQ!

Ingredients

  • 1/2 head of green (or purple) cabbage (about 6 cups) – washed
  • 2 stalks of celery -washed
  • 1 carrot, peeled and trimmed
  • 1/4 cup of mayo
  • 1 TBS apple cider vinegar
  • kosher salt and fresh ground pepper to taste

Slice the cabbage to make long ribbons. Chop the celery. Add both to a large bowl. Using a vegetable peeler, peel carrot strips into the bowl. Add the mayo, vinegar and a pinch of salt and fresh ground pepper. Mix well until combined. Adjust seasonings as desired. Refrigerate for an hour or more. Serve cold as a refreshing side dish!
