Soy Glazed Mushrooms and Brown Rice

Here’s another super simple recipe that you really just throw together with a few ingredients.

1 package of button or mushroom type you prefer, rinsed or wiped clean, stems trimmed, and mushrooms all sliced thin

1 teaspoon olive oil

2 – 3 Tablespoons low sodium soy sauce

1 Tablespoon chopped fresh ginger

1 cup brown rice

1/2 – 1 cup of chopped fresh greens like parsley, basil, spinach, etc.

Cook Brown rice according to package directions, usually 1 cup of rice to 2 cups of water, bring to a boil and simmer for 45 – 60 minutes. I use my rice cooker which is magical – I haven’t burnt rice in years!

In a saute pan, heat olive oil, add mushrooms (the pan may be full but they cook down a lot). Stir occasionally. Once cooked down add soy sauce and ginger and stir. Cook another 5 minutes. Serve over warm brown rice and garnish with parsley or other chopped greens if you like.
